I used to work with adults with developmental and physical disabilities and there were various opportunities for them to ski, kayak, horseback ride, ride with sled dogs, etc...and it always made my heart ache (happily) to see my dear friends with cerebral palsy ripping down the ski slope or waving from a canoe.

Have you seen the book, "Your money or your life" ? It has been a helpful guide for Dan and me (or, for me as I report to Dan) in seeing where our money goes and understanding how much we have to work to buy that 1) meal out 2) latte 3) etc.... And how when we have more money, we spend more money without our actual happiness necessarily increasing. It sounds simplistic but it's really a whole perspective shift. And god, no one wants to be poor, or go without the things that make us happy, but...when I start to see the monthly latte quota as equal to a couple hours of work, I realize I can work happily at the library with my own coffee from home.
Also, so glad to hear that your guy's new gig is going really well.
