I made baked scotch eggs the other night. Instead of using traditional bread crumbs, I took some leftover banana bread (and some other secret ingredients that I posted on my blog) and turned that into the base for my breadcrumbs. The spice of the sausage paired with the sweetness of the banana bread was a win win. I mean really, eggs encased in meat encased in breadcrumbs...COME ON!!! Awesome.
