First issue: there was never a time when Christians, or any others, wandered around casually talking about 'raising Ebenezers' in everyday conversation. But there was a time when Christians had a degree of biblical literacy which made it easier to appreciate the metaphor in the song. The next line of the hymn provides needed context and explanation.
Second issue: There is a difference between lack of accessibility and anachronism. If an element or a word doesn't make sense to anyone because it belongs to a bygone era, then it does need to be addressed. But your starting point above is that changes are made because simply because Christians can't be bothered finding out what something means and then moves on to justify that by making concern for those who aren't Christian the motive.

I haven't heard Webb's song, so I can't tell if you're remembering that being mentioned in a part you haven't quoted or whether there's some metaphor that I'm completely missing.
Reading it through my unhappy Presbyterian lenses I'd think Webb was encouraging us to share the Gospel (and then feed them.)

Jefferson Bethke: "If I can be brutally honest I didn’t think this video would get much over a couple thousand views maybe, and because of that, my points/theology wasn’t as air-tight as I would’ve liked. If I redid the video tomorrow, I’d keep the overall message, but would articulate, elaborate, and expand on the parts where my words and delivery were chosen poorly… My prayer is my generation would represent Christ faithfully and not swing to the other spectrum…."

I didn't mind the whole of it, but found the tone and presentation offputting.
The strength of the pushback is invited by the passive aggressive 'I'm not judging' sentiment of the piece.
As I'm reading your piece the basic defence is that Bethke redefines what religion is on his (Bethke's) terms and points out that Jesus is against it.
But I'm not certain that Bethke thinks that's what he's doing.
