tools -> folder options -> view (tab) -> check "show hidden files" and "show system files" -> click ok at the dialog for showing system files -> hit ok

If you have the iTunes logo on your phone you are NOT in dfu mode, you are in recovery mode. These are different states and are not the same thing.

Not necessarily, but you may need these files in the future in order to jailbreak your phone and you have a limited amount of time to capture them.

when you jb your phone with pwnage by default it installs that picture as the 'restore mode' boot logo, so if you saw that it means your phone was in restore mode.
