Especially with wrapping the meat in foil - I've experienced doing that, and true enough, it came out steamed, not grilled.
Also, grilling chicken without the skin is not something that I like. The texture becomes hard-ish and I don't like eating dry chicken. Some people may like it, some don't. :)
