Sorry if this has been answered before, but if I were to upgrade my iPad now to 4.2.1 would I still be able to jailbreak untethered later? I don't want to jailbreak now since I'd rather wait for untethered, but I really do want to upgrade. I have my SHSH backed up for 3.2.2.

I've heard it's double tap and hold as well. I'm sure the phone app favorites would come up if you don't have any music playing.
