"The first never says a word in the books."
Could it be that this character never says A PARTICULAR WORD in the books? Besides Ilyn, what other character is mute that we should care enough about to puzzle out clues for? I think it might be a crafty clue with the wrong assumed meaning.

Why not Ray Winstone for Jeor Mormont? I'm taking "from" figuratively in GRRM's post, and thus this one's easy...
GAVE UP ONE LORDSHIP AND RECEIVED ANOTHER.
Jeor Mormont gave up his lordship of Bear Island to his brother Jorah. He then received lordship in the Night's Watch, as Lord Commander.
A MERRY MAN FROM THE GOD OF WAR
Either a typo or some silly wording choice, but Ray Winstone played Will Scarlet (one of Robin Hood's Merry Men) and played Ares in The Lightning Thief, God of War.
So...
RAY WINSTONE as THE OLD BEAR JEOR MORMONT.
Easy peasy.
