the normal consistency is not that airy (is more like a pound cake) but when done with rice flour it can be very light and delicate. thanks for the visit Zita.

Thank you Sarah, it is probably that you´ve tried this cake before since its quite common although I think in Paris brasseries maybe you had the chance to eat financiers or other fancier cakes than this one. Let me know if the recipe works for you.
