Did you update your iPhone directly using iTunes without using a customized IPSW file? If so, you lost your unlock, possibly forever. Let me know what version it states in Settings -> General -> About -> Modem Firmware

If you did customize your IPSW, then all you need to do is run redsn0w again and check the install Cydia option.

In your original post you mentioned "I just unlocked my iphone 3gs ios5". How did you do this without installing Cydia?

Did you use redsn0w to create a custom IPSW and then did you upgrad your iPhone using iTunes from the custom IPSW? This is all that you have until now, correct?

1. Jailbreak
2. Install Cydia (usually done along with the jailbreak)
3. Use Cydia to install ultrasn0w

Obviously you've not installed the custom firmware created by Snowbreeze simple mode, else you would have been activated and jail-broken.

Please check once more. I'm guessing you've accidentally selected another IPSW.

I got a NO_BB IPSW from redsn0w generated on a Mac OSX. Still the same problem.

Downgrading back to 4.3.3

I think I'm going to sit this one out. Perhaps 5.1.x will be for me :)

Nope. Once you restore from the NO_BB firmware, you'll have nothing on the SpringBoard. Your phone will be still locked and will ask for the original SIM.

You will need to run "jailbreak and install cydia" from redsn0w and then you'll see it on the SpringBoard.

Use the simple mode in sn0wbreeze. It hacktivates, jailbreaks and installs cydia. You can install ultrasn0w through cydia after that.

My problem does not near yours.

I do not have any problems with dropped cellular service. I'm connected to my carrier just fine. I can use EDGE and 3G services flawlessly without any breaks in service. GPS also works fine.

I can also receive calls just fine. I can send and receive text messages. Only problem is that I'm unable to make any outgoing calls.
