When you mix oil with other foods (or on top) then the overall heat of the combined foods goes down so even though the oven is at 350 degrees the actually temp of the food including the oil is not especially in this situation since the fish is not in the oven for very long. Same with stove top stirfrys - as long as you make sure you oil is not sitting on high by itself you are not reaching a critical temp if the oil is mixed with other ingredients - veggies etc. Good rule of thumb is to use medium to low heat - high heat on a stove top can lead to burning and over heating.

There is always going to be conflicting news and research out there regarding health and nutrition; however most all large well-designed studies have very clearly demonstrated the link between high sodium intake and elevated blood pressure and it it known that elevated blood pressure can lead to heart disease. Just being aware of labels, finding lower sodium options, using herbs for seasonings and making fresh meals at home can do wonders for your overall health. Thanks for reading!
