Yes! Kefir works great in place of buttermilk if you've got it, or plain UNsweetened yogurt, or you can google DIY buttermilk by combining vinegar and milk.

I'm sorry it's been so long now I can't remember how long I baked them in the mini loaf pan. I'd set the timer for 20 and watch them. When the tops start to brown a little, prick them with a skewer or cake tester to see if it comes out clean and they're ready.

Hmmm. It's been so long now, but I don't think you're looking for a pourable batter like pancake batter. Dough isn't a bad thing, as long as it's good and moist and doesn't hold a shape...how'd it turn out??

Regular loaf pan? yes! 50 minutes, give or take. I bet these would freeze nicely. I would wrap them in foil and store in a freezer bag to keep them from getting a freezer taste.
