I love oxtail!! I never had this growing up and was one of the first dishes I was served after meeting my husband's family. Growing up my mother had always taught me to try foods before saying I don't like them. I have to admit when I was told I was about to try oxtail ... anyway ... I am glad I did because it is a dish I enjoy very much.

I lost my Mom when I was 14 years old. She is missed more than just on Mother's Day, but my sister's birthday usually falls around that weekend as well. We try to be together to celebrate our mother's life by going to the cemetary and then back to her house where our two families enjoy the time we are able to spend together and that ALWAYS involves a meal. Since we need to get through the Easter menu first it's hard to tell what Mother's Day could include, but we do always include a recipe that my Mom always made and that is her Molasses Whoopie Pies ... mmmm I can smell them now!

I have had different versions of this whenever I have visited a different family members, who are from Trinidad, but I am going to give this version a try for sure! Have never had the ackee, but I'm willing to give it a try ... like my mother always said, "how can you say you don't like something if you have never tried it".

Hi Chris ... love your "easy to make" recipes ... and the pictures are the best! My husband is from Trinidad and I have been surprising him with learning a few of his favorites from your receipes ... this is one I will try since I know he likes his pepper sauce ...

Hello Chris! I am so glad I came across your site in a search!! My husband is from Trinidad and I wanted to cook for him since the area we live in (Rhode Island) it's hard to find real Trini food. I have tried your stewed chicken and fry bake ... which I have done with success! So thanks so much for your wonderful posts with excellent instructions and pictures ... others I had found were not "teaching" me ... whenever I try a new receipe and my husband goes back for seconds ... I know it's a keeper, so thank you so much!!
