We mostly drink red wine in our house, so if we don't have any white, I like to use dry vermouth instead! We usually have a bottle open in the fridge and sometimes have a hard (not that hard) time using it before it goes a bit off... and it gives your risotto a kind of different spice to it. Try it out!
