I tend to use whatever is handy. I usually have flat-bread/naan on hand and goat cheese. Tonight I made, on whole wheat naan, a fig goat cheese, cilantro, green onion with a drizzle of EVOO, pizza. Seasoned with red pepper flakes, black pepper, Hungarian hot paprika and Italian oregano. Easy and no need to go shopping. I have frozen blanched asparagus in the fridge but was in the mood for minimal prep. Allergies have been kicking my butt!
I bought my flat-bread since I'm not a fan of baking. Ingredient wise for toppings, anything goes and, unless you are baking pastries, cakes, cookies, pies, flat-breads, etc., there's no need to measure (except my mother who was so old-school she "measured" ingredients like flour and sugar by pouring them into her cupped palm plus a pinch of this and that!). Just eyeball it, I say, if you're confident with your palate and yourself!
