I believe one of the polling companies conducted one on election day itself (not the exit poll, another ordinary poll) and it was still indicating a hung parliament with the main parties essentially tied. So I don't think it was (just) that loads of people suddenly changed their mind on polling day. There seems to be a shy Tory factor going on and people pretending they are going to vote Labour when they really aren't.

And? There will be around 500 or so MPs in the Commons after the election who will vote to renew Trident, i.e. 2/3rds of Labour on a whipped vote and pretty much all the Tories. So there is absolutely no risk of the SNP being able to block this. To fret about this is to fret about a red herring.

I very much doubt Cameron would want to carry on being Leader of the Opposition. In fact a sitting PM remaining Leader of the Opposition for any considerable length of time having lost an election hasn't happened since 1970. So surely the questions regarding these outcomes are somewhat moot?
