All I could think of was brussels sprouts and bacon, but this sounds much healthier! The flavors sound delicious, and I love apples in savory dishes, I'm giving this a try! :)

I like your boots! I work at home, too, but I only use thick socks and slippers (thongs or sandals, not the other kind of house slipper.) I'll have to look for some cute house boots next time I'm out shopping. Beet root smoothie? I love beets, raw and cooked, but never thought to add it to a smoothie. Does it have a prominent flavor or does it blend in with the chocolate? I'd love to try it. :)

GREAT IDEA! I tried this as soon as I read your recipe (7:30 am), but had to make do with what I had on hand: tofu, vanilla extract, agave syrup, vanilla protein powder and almond milk! I just made a single-serving for myself and I REALLY like it! I might have to pick up some bourbon to make it more eggnoggy, but having that nutmeg sprinkled on top gives your nose the signal to get ready for a delicious holiday treat! I used to pick up the dairy-free eggnog at the grocery store but I like your tofu version much better. Love it! :)

This looks so delicious! I've never had panzanella, it looks pretty simple, and what a great way to use fresh summer veggies. :)
