What a great spread. Can't wait to try these recipes. I just recently discovered Za'atar. I get mine from the Whole Foods bulk spice section. Not sure how it compares to the real thing, but I love it. Thanks!

Great tips, J.T.! I'm going through this now, and I'm sure I'm going to miss some opportunities along the way, but you've given me a few things to add to my list. :-) And I love your photo too!

I like Trader Joe's 21 Seasoning Salute. I don't use it as a salt substitute in recipes, but it's great on top of veggies when you want a bit of extra flavor. Could also be used with water for a broth substitute in a pinch.

Before I went vegan, Palak Paneer was my absolute favorite dish. It was how I measured a new Indian restaurant. It was probably one of the hardest dishes to leave behind when I went plant-based, so I'm really excited to try your Saag recipes! My favorite local restaurant has a great vegan Daal Maharani that I'd love to recreate at home. Got anything like that up your oven mitt? ;-)

I might have to try an experiment like this. I also tend to avoid recipes that have too many ingredients or a long prep/cook time. Just the list looks exhausting sometimes, especially if it's not items I normally keep on hand (though my spice rack and pantry look completely different than they did two years ago when I started this vegan journey).

Will have to give this dressing a try. Now I just need to find a good vegan reuben recipe. ;-)

Dressings are something I always struggle with, so I was excited to see this post. Can't wait to start trying them out. Thanks!!

Can't wait to try this one. So far every recipe of yours we've made has been a hit in my house (like the Easy Aloo Gobi with Kale!). I love collard greens. I discovered them through our CSA a couple years ago and before I went vegan, I'd cook them with scrambled eggs. Now I love them steamed with a little balsamic vinegar (and maybe raisins) or in the rice bowl I eat for lunch. Thanks for doing what you do!

We have a stovetop pressure cooker that I use several times a week to cook beans. I'd love to find more uses for it though. Thanks for the recipe. Do you know if the setting would be the same for a stovetop cooker?

I love pesto on whole wheat spaghetti or penne mixed with sautéed zucchini, bell peppers, and green peas. Delicious! It's also great on pizza and sandwiches. Thanks for the no-oil recipe!

Great travel tips. We take along fresh fruit and trail mix for the road, then try to hit a grocery store when we get to our destination. I'll have to try the Happy Cow app. We used the Vegman app on our latest trip, but it's limited to vegan and vegetarian restaurants. In some places knowing veg-friendly options would make it easier to find a restaurant nearby. Thanks!
