I am sorry to see you go, but I completely understand the motive behind stepping away. You were one of the first blogs I read when I started blogging, back when it felt more tight-knit and we were involved in food blog activities that were an integral part of this community. Thank you for blogging, and please know that you did make a difference to us who read your blog. Hopefully we can stay in touch!

Your mother is beautiful!

I usually have both varieties of cocoa on hand. My question, now, is that I usually buy Saco Premium Cocoa, which is a mix of both. I use it when a recipe calls for Dutch processed, but wonder if I should buy actual Dutch processed. I will ask on Serious Eats - thanks for that link!
