You have your hands full! Sometimes we have to draw the line in the proverbial sand and say "I want to do this, but I can't at this time."

Some years we've had a small tree for the kids to put on the ornaments they made in school and church. Growing up we had a similar tree and usually made paper chain garland to decorate it. Maybe next year they will be old enough to appreciate something like that?

I ended up doing the brining, but not the spatchcocking. One experiment at a time! I may practice spatcocking a chicken first.
