Dee, I buy a can of full fat coconut milk and refrigerate it for about a day. I then open it and scoop off the thick cream that has collected at the top of the can. It can be used in so many ways, I even make whipped cream out of it!

Thanks for being so kind and understanding about the late posting Jamie. I love coconut cream, it sure made me a happy camper when I found out I could use it as a sub for certain dairy products!

I'm an honorary group A member this week, and loving all of the delicious recipes I'm finding. Blueberries are definitely in season right now, and this looks like a great way to use them. I love how there are so many of them in the cake, it would be perfect for breakfast.

I am so sorry you’re having trouble finding the other hostesses links Adrian. Their links are supposed to have the word “HOST” after the name of their recipe or craft. You can see what I mean on numbers 1 and 19 in this weeks link up. Unfortunately some of us forget to add that word, and sometimes we get a little busy with our weekend activities and aren't able to add our link until later in the week. I apologize and want to thank you for being such a conscientious party goer! I will definitely bring this up with the other hostesses. Thanks and have a great weekend!
