I don\'t know that this would be high enough acid to can.
I\'ve not had the mousse stick around for more than a day and a half. I think it would be fine. You may have to fluff it with a fork to loosen it or you might leave it at room temperature for 15 minutes before serving. The blue cheese addition sounds AMAZING!!

I think you can totally drop some of the chilies and maybe replace with a variety of sweet peppers. I\'d love to hear what you think.
OMG, I totally forgot they used to sell Pastilles. The lemon were my favorite- oh and the violette with the fennel seed inside.
