YES. I've done this exact thing. 😂 I would freeze the roll before slicing - just because it will be easier. I've baked from both frozen and thawed. When baking from frozen...just add another minute to bake time.
Also - hibiscus?! That sounds AMAZING!!

You can absolutely use strawberry extract in place of the vanilla if you have a good extract you love. Most of the strawberry extracts I've tried had an artificial taste, so I didn't use them in this recipe.

The flour continues to absorb moisture and dry/stiffen and as it sits.

Yes! This is a common question/comment. From the post - WHY ARE SOME OF YOUR METRIC CONVERSIONS DIFFERENT THAN THE ONES I GOOGLED? -- Because I'm a weirdo. Apparently I don't measure "to standard". 🤣🤣 I figured it was more important that you have the best possible metric weights than that I match a standard. I hope you don't mind.

Unfortunately, strawberry puree adds too much moisture. I tried many variations that started with real strawberries or strawberry jams even, but they all needed so much more flour that they ended up with an awful texture.

Yes!!! Your instincts are great! When dough sits out in cold moving air (fridge or freezer) it will have a cracked, flaky surface texture when baked. If you need to chill cut-outs because of warm butter in the future - cover snugly with plastic wrap!
