2 hours in the fridge won't make any kind of noticeable difference! Just take it out, roll and bake as usual. Good luck!

When the cookies have been in the dehydrator for the max time, I turn the dehydrator off and leave the cookies inside to finish drying. 
I usually let a layer dry for about 10 minutes before bringing the tray out to add another layer.

They are a soft cookie. If you would like them to be crispier, you can bake them for an extra minute or two!

I don't add additional light. I set up next to a window as shown in the second photo. I do place a piece of white foam board on the opposite side from the window to erase the hard shadows.

You can absolutely change flavorings in pretty much any cookie recipe you make. I really wanted to create a cookie with a natural strawberry flavor because I have little people at my house with a strong aversion to strawberry flavoring. I would recommend starting with 1 1/2 teaspoons vanilla and 1 1/2 teaspoons strawberry emulsion and see if you like it!

I actually hand cut these. But you're welcome to ask a plastic cutter printing company to make them for you!
