I love how much body kale has. It always make a good dish. Yours looks great. I made mine with spinach but would happily make it again with kale.

I think we all like vegetables. We used to grow our own corn and we did not pick it until the water was boiling. While I heated the water, hubby went outside and picked the corn. It is as sweet as candy but better. Also, eat peas from the vine and you think they are candy.

This was a good choice but I had none of the ingredients. I am not bringing anything new into the house until after Passover. I have so much food to use up that I have to be strict with myself. I thought this would be a perfect dessert for the summer and I do want to make it.

I agree that homemade seems to come out better. Maybe, because it is so fresh, straight from the oven. My husband says he can't understand why anyone eats in restaurants when they can get better food, at home. Assuming, he is not being thrifty, I will take that as a compliment. I love eating other people's homemade food.

As a teacher, I relate to what you shared. I love the teaching and do not love the grading papers. It takes an effort to sit down and just do them. Coming home to this dinner though made a difference. This was easy to make and I am all for easy and it has spinach which sells the dish immediately. I like that we did not have any heavy sauces with it.
