Hi Tonya, no there was no marathon - to mine and many others great relief - considering the situation so many of our fellow New Yorkers find themselves in right now but thank you. Most health food stores both small and large chains, now carry amaranth flour - though if you have trouble finding it I would substitute unbleached, all-purpose flour for the amaranth flour.

Hi Darlene, For 4 cups of pureed corn (from about 5-6 cobs), I use 1/2 cup of unsalted, melted butter and add 1/2 a cup of tamal flour/masa harina. Basically, the flour should be added a little a time so that the filling is creamy but not runny and holds its shape when you mound it on the husk and wrap it. It will firm up and expand slightly when it's cooked. Ana Sofia

Beautiful absolutely, the kind that hurts. As a Cuban-American who has visited the island the only thing more painful than being there was leaving.
