It will still come with 3.1.2 so you can jailbreak that. Also when you do you will get asked by Cydia to store your SHSH, say yes then you can restore to 3.1.2

Yeah, hold shift while clicking restore so you can navigate to which firmware you like

Only applies to 3GS, Touch 3G. You would of got a popup when opening Cydia asking if you want them to be kept on file

It will work if you have SHSH files. Baseband won't downgrade though

Plug the phone in to the computer while holding the home button and try to get into restore mode. If not try DFU
