I have no idea. One possible fix is to just rejailbreak it, another, to use backgrounder and always run your text app in the background.

As far as I know, you cannot update without updating your baseband. Possibly, you can get a custom firmware file that upgrades to 3.1.2 w/o baseband, but I don't know about it.

It's all straightforward. No additional steps needed. Just update iTunes. If it says anything about updating iPhone firmware though, naturally, say no.

As long as you don't replace any firmware files on your iPhone, it should be fine.

Yes, but i would recommend JBing with blackra1n because I have an iTouch 2g as well, and I jailbroke it with Blackra1n on 3.1.2 and it works well. If you do want to downgrade, put your iTouch into DFU or Restore Mode, doesn't matter, then click Shift/Option+Restore in iTunes and select the 3.0 firmware for iTouch 2g you can get from Google.
