It is so great to see so much awareness about celiac and eating gluten free. It is amazing to think that 1 in 133 people have celiac, but also 3 out of 10 people have gluten sensitivity. So many more people should be eating gluten free, but they don't know it. Some of my family members found out due to having 3-4 autoimmune diseases, not really any GI problems. It shows up in so many different ways. Our family (including 2 small children) went GF almost a year ago as a preventative measure since we have celiac on both sides of the family. It was a challenge at first, but in the end, we are eating so much healthier! It is nice that so many restaurants are now offering gluten free menus. There also a lot of GF products on the market now that are really good. Food manufacturers are really seeing the need and developing new, tasty products. This article has a real negative take on how GF foods taste and are prepared. I have not found it to be that way!
