Hi Subbu, You can find parmesan cheese without rennet. I have seen quite a few varieties that are rennet free and that is what I buy. That said if you still want to avoid the cheese I have seen many versions of cheese free pesto made with pine nuts. I haven't yet tried pesto with pine nuts, so I am not sure of how much you would need in this recipe, but I am sure it would work. Let me know if you do make this a cheese free version and how it works out :)

Farhana, I haven't made this in the oven. But I think it may work if you set the oven at 425 deg F / 220 deg C and bake the kulchas for anywhere around 6 to 8 minutes. Do keep an eye on them a min or two before to see if it is done or not too. Hope this helps. Do let me know how they kulchas turn out in the oven.

I have never tried this korma with coconut milk. But I think coconut milk might work in this dish, it would definitely alter the taste a tad bit and give it a different flavor from the one I posted but I think it would be doable. Let me know how it turns out, if you try it with coconut milk :)

As I mentioned above, add the baking soda just before making the paniyaram. The step after seasoning and waiting for 30 mins. Just adjust water if required to achieve consistency, add soda, mix well and make :)

Thanks Satori for your comments. About the tomato paste, here in the US we get canned tomato paste that I used in this recipe. I have never tried substituting other products for tomato paste, but after checking up on it, I learned that if you have tomato sauce, you can simmer it on the stove top for 7 to 8 minutes on low to medium heat, stirring constantly until it gets thick and reduces by about two thirds. Use the resulting paste in this recipe. Hope this information helps, do let me know if you tried the substitution and how it works out :)
