If you are using fine sugar that we find in the US you do not need to powder it. Indian sugar, like turbinado has a coarse texture and large crystals, so if your sugar has that kind of texture then yes it might be better to powder it :)

You can definitely use home made chickpeas too. Just soak dry chickpeas in water for about 8 hours. Drain water, fill with fresh water and cook in the pressure cooker or on the stove top until soft. I use the pressure cooker for this. Drain excess water and proceed with the rest of the recipe.

With the proportions in the recipe the yield will be approx 20 to 22 adai. Yield will depend on size and thickness of each adai, so the number is only an approximation
