Don't strain it, if you want that 60s texture, as I do. Those in a hurry should just get Duncan Hines Double Fudge Brownie Mix and, again, add more liquid. But do indeed sauteé.

She's tiny, loved Bobby "Blue" Bland, had an old bathtub in her front yard that she used for her herb garden. She had a little house on Lorraine St. In west Austin. Our class was small. Every class featured a side dish (soup or salad usually), a main dish, and dessert. I was a cook in a local restaurant, so I showed the class how to make crêpes when that day came. We also had two bottles of wine along with the meal at the end of cooking class - a different class member each week was designated to bring one red and one white wine. The soup I loved the most and have made every winter for almost 40 years is her pistou - oh my GOD that was good! The whole class felt the same way. And there was a dessert of bananas poached in white wine with I think currants, honey, vanilla, and crushed roasted pine nuts that we all loved too. She printed out all the recipes for us, several pages stapled together. I left mine with friends in DC years later; when I called to get them to send them back, they LAUGHED at me! Douchebags - I never saw it again.

Martha Shulman (daughter of Max Shulman, who created Dobie Gillis btw) was my vegetarian cooking teacher in Austin, TX, in 1977. An awesome 10-week class that met weekly. We made spanakopita one night, but Martha used FRESH spinach! And I've told this next bit to people for years, and no one believes me: Martha put the fresh spinach in a huge colander and dumped an enormous amount of salt on it. Right before our eyes the salt forced the water out of the spinach! Once things settled down, she rinsed the spinach thoroughly. The end result was spinach which was greatly reduced in size and - incredibly- didn't taste at all salty. And the resulting spanakopita was pretty fucking delicious.
