O idioma da interface do aplicativo acho que será a mesma do iOS. Já o idioma da pesquisa por voz dá pra trocar: abra o aplicativo Google Search > na tela inicial, lá no alto à direita, clique no ícone de configurações (engrenagem) > clique no item "Pesq. por voz" > escolha o idioma da lista e clique em "concluído".
