All ponies are not equal. They live in a monarchy (Luna is very much junior to her sister) with a distinct noble class and loads of snobbery.

Yeah I think it's thoroughly established that Luna is the junior partner in that arrangement. Celestia calls the shots.

I'd say they really need Celestia to be a living combination of all three races of pony that they can agree on as a leader. But it probably takes a lot of unicorns to move the sun and moon and they probably didn't have much magic left for other things so the present system is much more prosperous.

You might as well consider it canon. When they said it wasn't, they meant that we aren't going to see it having an impact on the series. Sunset Shimmer and the hu-manes can't show up for another 2.5 years by which time they would have all graduated anyway, and they aren't going to be showing Twilight dating Flash Sentry.

We haven't actually seen any indication that Equestria has an equivalent of high school. Humans might just take longer to be considered adult. Not that it matters since there's no reason why your parallel universe counterpart need be the same age. Notice that the CMC counterparts are just a couple of years younger than the leads and Principal Celestia is pretty certainly not a thousand years hold.

Twilight Sparkle: A Book. She becomes a librarian.

Applejack: A laughing mask. Going to school in Manehattan, she's miserable until she discovers that she enjoys using her mimickry to make fun of the snooty teachers at her upscale private school. She becomes a comedian who does impressions and the basis of her routine is to contrast the differences between rural and urban, and upper class and regular ponies

Rarity: A rock. She becomes a sculptor because her destiny is a rock.

Pinkamena: A lightbulb. After inventing something to help with rock farming, she moves on to inventing things like new and better means of travel and communication.

Rainbow Dash: A rainbow that doesn't take the shape of a lightning bolt. She's still an aspiring stunt flier but one more oriented to precision than speed.

Fluttershy: A red cross inside a wing. She became a physical therapist for injured fliers.
