<description>I understand fructose is metabolized into 50% glucose, which is ok. Many fruits are high in fructose and are good food sources of energy and nutrients. High fructose corn syrup is mostly stripped of glucose and contains is metabolized into only 20% glucose, and as such is considered an empty calorie (mostly stripped of energy) and should be avoided.  Lactose is metabolized into 100% glucose. </description>

Generally, the heart rate will increase during the initial phase of any workout, then drop to a lower steady rate as the body adjusts to the workout.  That your resting pulse rate begins to increase again toward the end of your workout, could be a function of many things, including proper rest between workouts.  You could try to ease up slightly on your pace or change your gait.  You could also dry adjusting your breathing rhythm to a longer deeper inhale to see if that will help maintain your cruise pulse rate without a spike up. </description>

It seems your best strategy is to begin your swim even with good glucose stores in your body. You can accomplish this by eating pasta for the week prior to your swim event.  It is also important you start the swim fully hydrated and stay hydrated during the race.    You might consider drinking milk during your 10 hours of swim as it will keep you hydrated and has good calories.  If you can find raw milk, even better you would need to keep the milk in a cooler with ice. I understand the Nyad Team is planning to address the questions within the next few days. I took the initiative by writing the initial article to honor this swim as one of the modern Adventures .  After reading the National Geographic article regarding the questions and the buzz within the swim community, it seemed necessary to acknowledge the issue.  I plan on updating the article with the Nyad Team response, once it is released.   As I&amp;#039;ve added above, my hat is off to anyone who dreams, attempts and then swims from Cuba to Florida. <description>People that are lactose intolerant do not produce the enzyme lactase which digests the lactose. Raw milk contains the enzyme lactase for the function of digesting lactose into glucose.  Pasteurization of milk kills off the enzyme lactase and causes people that do not produce lactase to be lactose intolerant.  __You should have no problem drinking raw milk as the lactase in the raw milk will digest the lactose.  In some sense, raw milk is predigested and the nutrients are 100% bioavailable.  Good luck! </description>
